You could always soak and cook up some dried beans the day before to do away with the canned items.. You may have to alter the liquid content and spices but it should work fine.? Would I be able to double this recipe and still use the instapot directions? Originally I made it as written, and it was great. I substituted one can each of red kidney beans and black beans for two of the canellini beans in order to add a little color. I also made the balsamic flank steak with tomatoes and it was a hit. Mine totally dissolved and made the chili taste starch-y. I used 2 cans of garbanzos and 1 can cannellini beans, and replaced the last can of beans with a ton of fresh cooked sweet corn. Pull the breasts out after 4 hours or so, shred them, take the bean mixture out to purée, then return the purée and chicken back to the pot. ???????? This is going to be a regular for me.
